Spanning three continents from Eastern Europe to Western Asia and throughout North Africa, the Ottoman Empire was at the center of all interactions between the Eastern and Western world for over 600 years. Today, this spirit thrives in the collection of individual countries that now survive the reign of the Empire. While each country has it’s own local specialties, the world-famous flame-broiled meats and falafels live on as the main staple of everyday Mediterranean dining. Gyro, Doner or Shawarma: whatever you call them, these succulent, flame-broiled meats are all served in one form of pita bread, with a selection of fresh toppings and sauces, specific to local preferences.
